Primal Tabouli Salad – Our Health Habit

We love to cook lamb in the Prendergast home. Lamb burgers, lamb sausages, lamb meatballs, lamb chops… Yum yum! I created this salad as the perfect primal side-dish to complement lamb with mediterranean flavors (without the grains). This salad goes great with a chicken breast or salmon fillet too! It always satisfies my craving for something cool, crisp and filling.

Traditional tabouli salad is a simple Mediterranean salad of very finely chopped vegetables, lemon, olive oil, LOTS of fresh parsley and bulgar wheat. Instead of wheat I use riced cauliflower that I make in the microwave and then cool off in the fridge. All that delicious parsley combines perfectly with the lemon dressing, and trust me its even better the next day – so be sure to make extra for leftovers.

I also like to experiment a bit with the ingredients. Greek olives and banana peppers are not used in tabouli, but they make a great addition. Feel free to experiment with additional herbs as well – I have added in fresh chopped cilantro, mint and also oregano.

Primal Tabouli Salad

This salad goes great with lamb dishes, chicken breast or salmon fillet. It always satisfies my craving for something cool, crisp and filling.

    frozen riced cauliflower
  • 1
    red onion, finelsy chopped
  • 1
    bunch
    parsley, finely chopped
  • 1
    cucumber, finely chopped
  • 1
    cup
    cherry tomatoes, finely chopped
  • 1/2
    cup
    pitted kalamata olives, optional
  • 1/4
    cup
    banana pepper rings, optional
  • 2
    lemons, squeezed for juice
  • 2
    tbsp
    olive oil
  • salt, to taste

  1. Microwave riced cauliflower for minimum amount of time. Its okay if its still a bit cool when done since this is a cold salad. Chill in refridgerator.

  2. Very finely chop the vegetables, herbs and onion as indicated above.

  3. Place the chopped vegetables, herbs and onion in a mixing bowl. Add the cauliflower and season with salt. Add in olives and pepper rings if using. Mix gently.

  4. Add olive oil and juice of both lemons and mix again. (You can optionally add a pack of stevia here if you like.)

  5. Keep in refrigerator until ready to serve. This is a great salad to make in advance because it just gets better and better.
